The executive chef Hugo Orozco is the one who leads the restaurants of the Santanera group and is the creator of each of the menus that, based on his experience and the place that Playa del Carmen is, has been adapting to culinary trends.

Fusing styles of kitchens, demanding continuous innovation every day to satisfy each of the diners and focusing on seafood with which he has created very original and unique dishes adapting them to each of the menus of the different restaurants such as El Diablito cha cha cha, Caníbal royal y Los Aguachiles which is focused on a tropical tavern working with fresh and local products, with which each of the dishes reflects the demand for execution and its unique flavors.
